Oh, urban dictionary. Once upon a time, words like “duck” and “butter” and “pudding” could be used in the same sentence, and a person named Sanchez needing a bath need not have feared the giggles of drunken high-schoolers.

I so do NOT want to know what the duck pudding is, thank you very much.

The kitten is NOT deformed, its left ear is just facing the camera straight on.

BUT it does have a small eye infection which is easily taken care of with some epson salts on a cotton ball.

Just thought you should know ;)

Duck & Pudding…

Dulac Duck Yorkshire Pudding
Yield 6 – 8 Dinner Servings

Ingredients
1-1/2 CUPS DUCK GREASE (OR use the drippings from a Standing Rib Roast)
4 CUPS FLOUR
3- 1/2 CUPS MILK
1/2 CUP SMOKED DUCK STOCK (See Recipe) (or use Beef Stock)
2 TSP SALT
8 LARGE EGGS

Method
Add duck grease to a 2″ half hotel pan and preheat convection oven to 375F with grease and pan in oven. Mix all ingredients in a bowl and whisk until batter is foamy. Remove pan from oven and pour batter in hot oil and bake until golden brown. At least for 20 minutes.

Alternate Method
Pudding can be cooked in a conventional oven at 400F for at least 35 minuets. Pudding should be allowed to puff up and turn golden brown on the edges and risen center.

Plate Presentation
Pudding should be sliced like a New York pizza, served immediately after cooking, and with Smoked Duck Demi Glaze spooned over.

Chef’s Notes: OR use the drippings from a Standing Rib Roast.

Now, Theo, “hoover” is the British verb for “vacuum cleaning”. One can hoover with a dyson (which they spell in all lower case, so ya!). One can hoover with a(n?) Eureka. One cannot, however, oreck with a hoover. AFAIK.
